Tomatoes and feta with crispy zaatar pitas

The star of this recipe is, in my opinion, the crispy zaatar pita.
It’s really the best discovery of the summer as far as I’m concerned.
Inspired by Lebanese manouchés, this way of cooking pitas is brilliant. I usually use store-bought pitas. In reality, you can use just about any flatbread. Just cover it with zaatar. Very generously. Then drizzle with olive oil. And pop them in the oven to develop the flavours and crisp them up to perfection.
Then you can break them into small pieces and add them to the dish. As I’ve done here. Or dip them in the creams and hummus of your choice!
What’s more, it’s a perfect anti-gaspi technique, as it allows you to use pitas that aren’t too fresh!
Here, I’ve prepared a simple feta cream. I didn’t even take out my blender. I simply crumbled the feta into some yoghurt and added some pressed garlic.
This dish was ready in about twenty minutes. And it’s a real summer delight!

Ingredients you’ll need for these Tomatoes and feta with crispy zaatar pitas
For the zaatar pitas
2 pitas
zaatar
olive oil
For the feta cream
300g of

300g Greek yogurt
200g feta cheese
2 cloves garlic
a little water
To finish
7-8 tomatoes
kalamata olives
thyme
Instructions
Prepare the pitas
Preheat oven to 200°C.
Cut the pitas in half.
Place on a baking sheet and cover with zaatar.
Drizzle a generous amount of olive oil over each pita and place in the oven at 15°C.
Prepare the feta cream
Mix the yoghurt, crumbled feta and pressed garlic cloves in a bowl. Mix well. Dilute with a little water if necessary.
To finish
Spread the feta cream on the plates.
Slice the tomatoes and place them on top of the feta, along with the olives, thyme and broken pitas.
